How To Make Matra For Kulcha | North Indian Matra Recipe:

For this particular recipe, you need white peas (soaked for atleast 4 hours with some salt), ghee, ginger, black pepper, cardamom powder, coriander powder, roasted cumin powder, amchoor powder, lemon juice, coriander leaves, ginger julienne and chaat masala.

Pressure-cook the soaked peas. Add ghee, ginger and salt to the pressure cooker and cook for some time. Adjust the water as per need. Add rest of the spices and blend everything well. Garnish with lemon juice, chopped coriander leaves and ginger julienne and serve with soft kulchas.
