Holi 2021: Every Indian festival presents a range of special dishes that we look forward to having that day to indulge in the festive fervour. Holi too has its own set of specialities that are made during the festival to mark the day. Kanji vada is one of the dishes that are commonly made and had in Indian households during Holi. Tangy and spicy water with dal fritters floating inside, kanji vada is just the lip-smacking snack we need to whet our taste buds. Besides being superbly delicious, kanji vada is also light in nature and is easy to digest.

Kanji vada gets its health benefits from the fermentation process that is used to make the water for the snack. This water is always made in advance and the vadas made with protein-rich dal are dunked the same day when it is to be served. This recipe video from the YouTube channel ‘Cooking With Reshu’ shows how to make kanji vada just like you get on the streets and that too in a simple and easier way.

Holi 2021: Here’s the full recipe of easy street-style kanji vada for Holi festival:

Step 1- Prepare kanji vada water. In a bowl, put crushed sarson, salt, turmeric powder, red chilli powder, mustard oil and some water. Mix well.
Step 2 – Take a glass container, pour water and add spice mixture. Cover and keep it in a warm place for 2 days.
Step 3 – Make vadas that day you want to serve them. Soak moong dal for 2 hours and grind it to make a coarse mixture. Add salt, hing, and whisk well for 5 minutes to make it soft and fluffy.
Step 4 – Pull out small amounts of the dal mixture and deep fry them in hot oil on medium flame to make vadas. The vadas should be medium-golden in colour.
Step 5 – Add roasted jeera and a pinch of hing to kanji vada water. Toss in the vadas in the water and let them rest for around one hour.
