To make a batch of six cupcakes, all you would need are one cup of rolled oats, one tablespoon of peanut butter powder, four dates, half a teaspoon of cinnamon, around 400 grams of coconut yogurt, a quarter teaspoon of organic stevia, and your favourite fruits.

The recipe? A cakewalk (pun intended).

Mix the rolled oats, cinnamon, chocolate peanut butter powder, and pureed dates with some water to make a thick, crunchy, pasty cupcake base. Now, evenly distribute this mixture in your cupcake liners so the cupcakes have a tight, strong base. Then mix your coconut yogurt with a dash of stevia powder and layer your cupcake bases with a thick creamy layer with the yogurt.

Chop up your favourite fruits and top the cupcakes off with pieces of fruit. Pooja’s topping has seasonal peaches, cherries, and pumpkin seeds. Now, put your cupcakes into the freezer for around two to three hours, and, voila, you have a set of six, gluten-free, vegan cupcakes with no added sugar and oodles of antioxidants and good fat richness. Awesome, right? All thanks to none other than Pooja Makhija.
