You may get a lot of options to make for breakfast but some people are committed to a particular kind of food to start their moorings with. Some cannot do without Punjabi-style parathas or chole bhature, some like simple breakfast cereals and smoothies, and some just need the flavours of the south to revitalise after a good night’s sleep. South Indian cuisine offers a plethora of healthy and tasty breakfast dishes that one can’t be blamed for wanting every other day. And out of the lot, some dishes like upma and poha feature in the topmost breakfast recipes of almost everyone’s list.
Upma is made with roasted sooji (semolina flour) and is combined with lots of vegetables and spices like mustard seeds, curry leaves, urad dal and chana dal. Upma is loved for its high nutrient quotient and great taste. You can add in any vegetables of your choice to make this vibrant dish. Mostly, vegetables like onions, carrots, capsicum, peas and green beans are used.
Here we have a unique recipe of curd upma, which adds in the goodness of whipped curd. Buttermilk adds a tinge of tanginess and loads of freshness to this classic south Indian delicacy. And it’s not even much of a task to make this version of upma. You have to make your regular upma the way you do, just in between the cooking process, whisk some curd, add salt and red chilli powder, and add this curd water (buttermilk) to the upma already cooking on the stove.
